To meet the typicality of terroir and grape varieties , we use only natural yeasts present on the grape skins at harvest Fermentation takes place in stainless steel tanks equipped with thermal control in the form of runoff cold water. Vinification are grape variety . After aging for 11 to 16 months and two extractions , the wine is bottled between September and March .
