Carrol Bellel field is located 20 km from Montauban and 45km from Toulouse. It belongs to the family for several centuries. In 2007 , Yannick joined his father Gilbert GASPAROTTO . It magnifies the surface of vineyards and continues to evolve the field for the sake of quality. Rational control has been practiced for several years in collaboration with the Chamber of Agriculture .
The harvested grapes are de-stemmed and crushed . Once vatted it undergoes a cold maceration for a week. After it is launched fermentation during which many pumping and two outages are performed . Once fermentation is complete is macerated hot for a period of 15 days. The wine is then aged in vats for 6-8 months.
Shiny purple dress , supported , purplish tints , limpid ; Complex and intense nose of fresh black fruit (blackcurrant, berries) with a hint of violet typical of négrette on a spicy background (green pepper). Heady, persistent. Sweet attack , tender. The tannins are firm and melted present on the fruit. Pointe liquorice finish. Good aromatic intensity . Intense aromatic persistence (PAI caudalies = 6 ) . Can be consumed now , after decanted an hour before tasting and deserves 2-3 years of cellaring to reach its peak . Recommended temperature of tasting : 16 ° C.
