Our vineyard is located on old terraces of the Tarn, 20 kilometers north of Toulouse.
The estate, surrounded by vineyards, is situated on a clayey-gravelly soil covered with alluvial deposits coming from the regions of the central massif.
The climate here is relatively sunny (2100 hours per year - 47% of the time) and the rains are low and irregular (65 cm per year). The prevailing wind, the famous wind of so much, lulls us in winter as in summer.
It is a hot, dry wind that favors the good maturation of the grapes, the good sanitary condition of the vines and the concentration of the grapes in sugar (by evaporation of the water).
Vinification remains traditional with long pre- and post-fermentation macerations. All grapes are destemmed prior to vatting.
A prime factor is the crushing of the grapes, as practiced by our elders. The vinification then remains classic, with two pumpings per day that flood the hat of floating marc, to the air, during the fermentation.
The press wines will be immediately re-incorporated into the wine of taste in order to maintain the structure and balance of the wine.
The wine will be filtered once before bottling on a "press filter" in order to preserve all its potential.
A slight natural deposit can thus occur at the bottom of the bottle over time. The color is deep red, with dark, purplish reflections and garnet notes.
The aromas in the nose are intense blackcurrants, blackberries and black fruits brought by the Negrette mingled with notes finely grilled and spicy.
The mouth is powerful, round and licorice, the complex aromas consist of red fruits (gooseberry and raspberry) and black fruits on grilled and smoked notes.
The tannins are silky and melted thanks to the duration of the rearing and the richness of the wine will support rich and copious dishes.
Serving temperature: 19 ° C.
Drink 5 years after harvest.
Open five hours before serving and preferably decanting.
It will accompany your civets, magrets, confits and red meats, ribs to the bone or even game, to a greater extent all dishes simmered.
