The vines are planted on the town of Fronton, about twenty kilometers north of Toulouse on a floor surface boulbènes gravelly and stony marl in depth.
The négrette is the local grape of the Fronton appellation. This variety remains unusual and capricious. According to history, the country of Cyprus négrette was brought back from the Crusades by the Knights of St. John of Jerusalem.
It is with a perpetual observance of the plant and a reasoned approach of the culture that this grape is grown. The land is mechanically worked every second row, unpacked in terms of rank turfed in which organic life largely participates in soil preservation. To limit the risk of pollution, there is no residual weed control, or anti-botrytis. The biological diversity of the soil gives the grapes a full expression of the terroir.
The grapes are picked when fully ripe fruit of their expression and night. Then, gentle pressing and fermentation at 17 degrees for about two weeks gives it freshness and fruit balance. The roundness is itself brought about by aging on the lees and lees stirring until late November. One light filtration before bottling will preserve all the olfactory and gustatory qualities of wine.
This vibrant expression rosé is a concentrate of gourmet flavors, intense freshness, which leaves the mouth full room for the expression of the fruit.
As an aperitif and throughout the meal, especially during the warm summer evenings.
