Wine from grapes of old vines (over 30 years). The vines are planted on a soil composed mostly of Boulbène with some plots which are also on gravelly soils.
It is a "rosé". Few hours after the fermentation of grape juice which has recovered the color is separated from solids. The "rosé" have the advantage of being fatter and fruity. Then the juice is placed in the insulated tank to descend to a temperature below 10 ° C for several days to allow settling. The wort is fed into the fermentation tanks to convert the sugars into alcohol by yeast. The temperature is maintained at 15 ° C to preserve the aroma. The fermentation will take place for a few weeks. Then the wine is stored in insulated tanks to preserve the aromas until bottling.
A dress a gourmet pink, an intense nose, fresh and fruity. The mouth is rather toned, round and persistent. What makes us a very nice set. Serve between 8 ° C and 12 ° C maximum. This wine should be drunk within a year.
It supports a whole meal in summer. It can be served with salad and tomatoes peppers. It can also be enjoyed with oily fish. Regarding desserts it is enjoyed with red fruit desserts to recall the red fruit side of the varietal. .
