Château BAUDARE - Dry White Wine - Sauvignon 2016

Our vineyard is located on ancient terraces of Tarn, 20 kilometers north of Toulouse.
Domaine surrounded by vineyards, is a clay-gravel soil covered with alluvium from the regions of the Massif Central.
The climate here is relatively sunny (2100 hours per year - 47% of the time) and rainfall is low and erratic (65 cm per year). Dominant, the famous wind of wind as we rocked in winter as in summer.
It is a hot, dry wind that promotes good grape ripening, the good health of the vines and grapes in sugar concentration (evaporation of water).
The grapes are picked at perfect maturity between 20 and 30 September.
The grapes are still some hours maceration.
The juice is then heated to a very low temperature and then fermented for a few weeks where it will ferment slowly to develop the flavors.
It will then be stored in insulated tanks until bottling.
Our dry white is characterized by its aromatic intensity. The nose is reminiscent of fresh passion fruit mixed with floral notes of wood.
This is a fruity wine with aromas of flowers, boxwood and passion fruit.
This kindness is found in the attack. The palate is fresh, ample and persistent, supported by floral and citrus notes that give the wine its typical character of Sauvignon.
