The Comté Tolosan, an Aquitaine vineyard, is located on the wide terraces between the Pyrenees and the Massif Central.
The presence of quartz in this poor and gravelly soil allows a good adaptation of this great varietal of the southwest (Jurançon): the Petit Manseng.
100% Small Manseng. This grape variety is able to concentrate the sugars in its berries while maintaining an extremely high acidity. It makes it possible naturally to produce sweet wines very aromatic and of high quality.
Harvested during the morning and cool hours of the day, the grapes are totally scratched, lightly crushed and then pressed with a pneumatic press with a closed cage. The must is carefully protected from oxidation, it is cold-set and put into fermentation. This is very slow (4 to 5 weeks) and takes place in a thermostatically controlled stainless steel tank between 15 and 17 ° C.
At the end of the fermentation, the extracted wine is stirred and raised on fine lees for several months in new barrels. It is then clarified and stabilized before bottling.
The dress is yellow lightly golden, bright and bright.
Nose of slightly toasted flowers like acacia, honey and exotic fruits.
In the mouth the attack is elegant and sweet. Pineapple, buttered and grilled notes predominate. Long finish slightly acidulated.
Storage for 3 years depending on storage conditions.
Ideal service temperature: 8-10 ° C.
