The harvest takes place during the morning hours of the day and fresh. It is broken,
lightly crushed, then macerated squeezed using a pneumatic press closed cage
for a better extraction of grape components. The musts are carefully
protected from oxidation by inerting throughout vinification. The grapes are vinified
separately. The decanted must ferments very slowly (3 weeks) in tanks
temperature controlled at 17 ° C. At the end of fermentation, the wine is crossed and raised on fine lees during
several months. After assembly, it is clarified and stabilized before bottling.
Deep salmon pink dress with purple shades, clear and bright.
Intense and fresh nose, English candy, fruity lemon and cherry, and a touch of tarragon. Mouth tart
between sweetness and freshness, with a final on lemon and pepper and fenouillée button.
Conservation 1 to 2 years depending on storage conditions.
Ideal serving temperature: 8 ° C.
Shredded chorizo, grilled red mullet, fennel gratin with cream, sausages with herbs, tajine
lemon chicken, fresh goat pepper or herbs, cheesecake.
