Château BOUISSEL - Vin Rouge - La Guillotte 2013 BIO
2011 : Grappe de Bronze - Guide Hachette 2013
Négrette : 100%
Our vines are planted on the 3rd and highest geological terrace of the Tarn on a gravely soil and gravel boulbènes.
The 22 hectares are made up of these meager soils uncommon in Fronton appellation.
The row of vines is found in spring and covered in early summer. The inter-row is worked half the time to aerate the top soil, alternating with inter row turfed. Disbudding and manual thinning can create natural ventilation of the grapes and good foliage report / grapes. A stripping is performed next "rising sun" (the wind Autan) always in order to aerate the grapes because Négrette is extremely sensitive to botrytis, which makes her very sensitive culture. Mechanical harvest early in the morning ("the cool") for the grapes retain their aromatic potential.
Stemming and crushing. Fermentation of 10 days below 25 ° C on indigenous yeast to give the future wine all its natural potential. The end of the fermentation takes place at a temperature close to 29 ° C in order to obtain a balanced structure.
Beautiful ruby red with violet hues. Fresh wine, supple and elegant with aromas of violets, blackcurrant and liquorice. This wine should be drunk young. Serve slightly chilled.
Very friendly, you will enjoy it as an aperitif to accompany meats, soft cheeses or exotic cuisine.
