Vines Négrette "High Expression" are planted on a rocky buttress clay deep south facing , ideal for good maturity Négrette . This parcel of land was part of the property of John Vigouroux in 1882. These vines have been specially selected for their low natural yield due to their advanced age.
The vinification is traditional with two daily punching down , morning and evening.
To properly express the aromas of red fruits and spices Négrette , fermentation will conduct low temperature , very important for the preservation of fruit , about 25 ° C.
Juice remain in maceration about 5 days.
The malolactic fermentation is carried out partly in barrel and aging. The wine is filtered once before bottling to preserve its potential.
Like any aging wine , it may have a slight natural deposit .
The barrels are then reassembled the wine vat.
The color is deep red , dark purple and garnet reflections showing notes.
The aromas on the nose reminiscent of cassis , blackberry and black fruit made by Négrette mixed with finely roasted notes and spicy . The palate is powerful , round and liquorice , complex aromas of black berries. The tannins are silky and melted through the rearing period .
Guard 8-10 years. A drink of preference on the fruit in the first 4 years .
A drink on a woodcock , a game truffled duck with mushrooms, a hare stew or a casserole of lamb with olives.
